Clean Apple & Pecan Yam Bake
Here is a clean, whole-food recipe for a Yam Bake that uses unrefined ingredients and contains no processed sugars or heavy marshmallows.
Prep time: 15 minutes | Cook time: 40 minutes | Servings: 4-6
Ingredients
Yams: 2 large yams (peeled and sliced into 1/4-inch rounds)
Apples: 2 crisp apples, like Honeycrisp or Granny Smith (cored and sliced into 1/4-inch wedges)
Oil: 2 tablespoons melted coconut oil (or butter or avocado oil)
Sweetener: 2 tablespoons pure maple syrup or raw local honey
Spice: 1.5 teaspoons ground cinnamon
Spice: 1/4 teaspoon ground nutmeg
Salt: 1/4 teaspoon fine sea salt
Nuts: 1/2 cup raw pecans (chopped)
Instructions
Preheat & Prep: Heat your oven to 375°F (190°C). Lightly grease an 8x8-inch baking dish with a touch of coconut oil.
Toss: In a large bowl, whisk together the melted coconut oil, maple syrup, cinnamon, nutmeg, and sea salt. Add the yam and apple slices, tossing until everything is evenly coated.
Layer: Alternate layering the yam and apple slices in the baking dish so they slightly overlap. Pour any remaining spiced oil mixture from the bowl over the top.
Bake: Cover the dish with foil and bake for 30 minutes until the yams begin to soften.
Topping: Remove the foil, sprinkle the chopped pecans evenly over the top, and bake uncovered for an additional 10 minutes until the apples and yams are completely tender and the pecans are toasted.
