Recipe: Mediterrean Lamb Burger

This Mediterranean Lamb Burger is packed with flavor, using our fresh egg yolks to keep the meat incredibly juicy, a touch of our local honey for balance, and finished with a rich baste of our handmade herb butter right on the grill. Grab some of your ingredients at the market this Saturday!
Ingredients (Makes 4 Burgers)
1.5 lbs Ground lamb
2 tbsp Your farm's herb butter (melted, for brushing)
1 tbsp Your farm's raw honey
1 large Farm-fresh egg yolk (acts as a binder to keep the burgers juicy)
2 cloves Garlic, minced
1/2 cup Feta cheese, crumbled
1 tsp Dried oregano (or 1 tbsp fresh mint, finely chopped)
1/2 tsp Salt and black pepper
4-Step Preparation Method
1. Mix the Pasture Blend
In a large bowl, combine the ground lamb, garlic, feta cheese, oregano, salt, and pepper. Add the raw egg yolk and the raw honey. The honey subtly cuts through the gamey richness of the lamb, while the egg yolk locks in moisture. Mix gently with your hands just until combined—do not overwork the meat.
2. Shape the Patties
Divide the mixture into 4 equal portions. Shape them into patties about 3/4-inch thick. Press a slight indentation into the center of each patty with your thumb to prevent them from puffing up on the grill.
3. Sear and Baste
Preheat your grill or cast-iron skillet to medium-high heat. Grill the patties for 4–5 minutes on the first side. Flip them, and immediately brush the grilled tops generously with your melted herb butter. Cook for another 3–4 minutes until the internal temperature reaches 145°F (63°C) for medium.
4. Assemble
Serve on toasted brioche buns. Top with a dollop of tzatziki sauce, sliced cucumbers, and fresh red onion.
